This is not my first time smoking, but I did get my Masterbuilt smoker this past Christmas. I've been attempting to smoke ribs, and every time I have had the smoke rolling out of the smoker. Everything is great until I take a bite, the rib is cooked perfectly (my opinion of course), but theres no smoke flavor or smoke ring. I'm using apple wood and pecan wood.  Has anyone had this problem before? Anyone have any suggestions. Thanks in advance.
 
Electric smokers do not produce smoke rings. That said I have never had an issue with a lack of smoke flavor

Do you foil your ribs. I tried that once I found they had significantly less smoke flavor than if I left them unfoiled.

Prior to getting my MES I smoked ribs on my kettle grill for years without foil. With foil on the MES they did not have the smoke flavor I was accustomed

Just tried no foil BB on the MES and I got the smoke flavor back. Even my 7 yo said they tasted like I used to do them. They were a hit with everyone

The only thing missing was the smoke ring

To find out why Google what causes a smoke ring.
 
The smoke ring is for looks and does NOTHING for flavor......don't buy into the Competition definition of smoke flavor. 

If you aren't getting the smoke flavor you are looking for maybe it's your wood.  Try Hickory.....or Mesquite......Pecan and Apple are mild flavored woods.

Awesome thanks guys, I will definitely be trying woods. I wont be worrying about the smoke ring. And yes I do foil my ribs about 3 hours into it. Maybe I'll have to move up to a different smoker... I'm wanting to try a smoking competition. Thanks guys.
