Just joined the forum, been smoking meat for a short time, I have a cheap Brinkman gas smoker. I smoked a pork tenderloin and I think I smoked it too long. Internal temp was good (145 degrees). I used a commercial dry rub, but it had a bitter taste. Is it the smoke, (apple wood) or the rub? My wife loved it, but I was disappointed. Any comments are appreciated. Welcome Sam, bitter taste is usually from your smoke being trapped in your smoking chamber to long, make sure your top vents are open so it escapes freely. I'm sure others will chime in with more info.
