Brined some Legs and Thighs this morning, started my MES40 set at 250* F using my mailbox W/AMNPS , Alder Pellets. These were coated with Olive Oil and my Chicken rub

Had another package of Thighs for the spicy coated with melted butter and Louisianna Hot Sauce then dusted with my Chicken rub

Great smoke Tropics. Meat looks tender and juicy. Super color as well. Bad part is all of mine from yesterday are gone. So I guess I'll have to look and drool!!! :drool
