Whole lotta pig!

Smoked two 7 pound pork butts, and two slabs of babybacks for a small get together. Also smoked some beans.

I didn't take as many pictures as I wanted to (happens after a days worth of PBRs) but I took a few.

Pork butts went on at midnight at around 200 degrees. Smoked them till 330pm. Used the 2-2-1 method on the backs. One slab was a little larger (about 1pound difference) so they went a little longer.

Everything came out great. Guests had no complaints.

I don't know why I look at this stuff when I don't plan on having breakfast. My growling stomach scared away my cat.

Great bark on that butt...was curious what you seasoned it with?

Knifebld, I have a homemade seasoning I've been using on pork with great success for about 10 years now. Heavy on the brown sugar and them your typical paprika, cumin, chili flakes, cayenne, salt, and pepper. I also use rosemary and a few other things. I've added and taken away from it over the years.

I have also been working on a dry rub for years.  I finally got it to a place where I can honestly say I like it.  Then the other day when I went looking for it, the wife was nice enough to put it away.  WHAT DOES THAT MEAN?  LOL  It took me well over an hour to find it.  At least she attached the piece of paper with the recipe to the container.  Close call.


Hillbilly, your pork looks great.  I am so hungry right now.
