This is my go to Rib Rub.....I have been tweaking it for a while and feel it's almost there as far as my tastes run

What I've started doing is cutting down the sugar in the rub, then adding turbinado sugar to the meat after it is rubbed to match folk's sweetness desire. It is actually fun to add the turbinado sugar at the end too, after they are sauced and finished.  The raw sugar crystals kind of explode in your mouth with crunchy sweetness.  I bet the kids would LOVE that!  Pic below.

Ray's Rib Rub for Pork

Triple this recipe for a full shaker. Even though there is pepper in it, there is very little heat in the rub.

Ingredients
1 Tbs brown sugar
2 tsp kosher salt
1 1/2 tsp sweet paprika
1 tsp black peppercorns
1/2 tsp cinnamon
1/2  tsp cumin powder
1/2  tsp Garlic Powder
1/2 tsp onion powder
1/4 tsp cayenne pepper
1/4 tsp New Mexico chili powder
1/8 tsp mustard powder

Directions

1. Throw all ingredients in a blender and blend until the peppercorns are broken up.

Hey Rye,

You got a lot of good rub suggestions. Smoked some spares for the kids about a month ago which they loved! Here was my process;

Initial rub;

- 3/4 Cup Dark Brown Sugar

- 2 tbsp Dry Mustard

- 2 tbsp Onion Powder

- 2 tbsp Kosher Salt

- 1 tbsp Ground Black Pepper

Foil with butter & dark brown sugar

The mop with;

- 1 Cup Apple Sauce

- 2 Cup Brown Sugar

- 1/2 Cup Lemon Juice

- 1/2 tsp Salt

- 1/2 tsp Pepper

- 1/2 tsp Paprika

- 1/2 tsp Garlic Powder

- 1/2 tsp Cinnamon

The sweetness was not overpowering and they turned out just like a famous restaurant in Montreal called Bar-B-Barn!

Hope this helps. Cheers

Sounds good knifebid. I dont mop my ribs. I just spray them with apple juice.

If you like a sweeter Rib , try putting a tsp. of  Turbinato Sugar to each and spread it over the face of the Ribs and let them finish , I do this about 30min. before I serve them, good

 I use a rub similar to Scott's .

Have fun and . . .

i make a good bbq dipping sauce. here is how you make it:

onion

black pepper

kosher salt

light or brown sugar

onion and garlic powder

ketchup

apple cider vinegar

(not giving any measurements) sorry

i make a really good rub also (use it on everything i smoke):

Black pepper

Kosher salt

Granulated onion

Granulated garlic

Paprika

chili powder, red pepper flakes(optional)

i dont use sauce. if bbq comes out right you dont need sauce but, alot of my friends/family like to use sauce on the bbq.

i know alot of people are against putting water pans in the smoker but i do. i use a 12 oz bottle of coors mixed with 12 oz of apple juice.

Found something already premade, so much so it's become my go to rub for ribs. Straight out of the bottle or just add a bit of brown sugar, has everything that was in my home-made rub.... Club House / Mc Cormick Montreal Steak Spice..... even though it might taste a bit salty, trust me, the salt taste disappears.

If you Foil these are a favorite of my kids...JJ

Mild Bubba Q Rub  (All Purpose)

1/2C Sugar in the Raw (Turbinado)

2T Sweet Paprika (Hungarian)

1T Kosher Salt

1T Chili Powder (contains some Cumin and Oregano) Ancho Chile is same without cumin, oregano etc.

1T Granulated Garlic

1T Granulated Onion

1tsp Black Pepper, more if you like

1/2tsp Grnd Allspice

For more heat add Cayenne or Chipotle Pwd to taste, start with 1/2tsp and go from there. Makes about 1 Cup

Apply your desired amount of Rub to the meat, wrap in plastic and rest in the refrigerator over night.or longer. The day of the smoke, pull the meat out, add more Rub and go into your pre-heated Smoker...

Foiling Juice / Sweet Pulled Pork Finishing Sauce

Foiling Juice

For each Rack of Ribs Combine:

1T Pork Rub, yours

1/2 Stick Butter

1/2C Cane Syrup... Dark Corn Syrup...or Honey

1/4C Apple Cider...or Juice

1T Molasses

Optional:

2T Vinegar, 2T Mustard and 1/4C Ketchup to make it more of a KC Style Glaze.

Simmer until a syrupy consistency.

Allow to cool for 5 minutes, pour over foiled Ribs and

run your 2 hour phase of 3-2-1. For the last phase return

the ribs to the smoker BUT reserve any Juice remaining

in the Foil. Simmer the Juice over med/low heat to reduce to a saucy thickness. Glaze the Ribs for presentation or service.
