Thanks Reinhard, you helped me out a great bunch thanks for all the inside help. These were so far the best sticks I have made. THANK YOU!!
Very nice work on those sticks!!! I think it's great to have all the pictures like you had here. Really helpful. Great from start to finish. Reinhard
DS, Sorry you are out of my network, just talked with UPS, USPS FEX EX, ARMY, NAVY, AIR FORCE AND MARINES, Can not get them delivered to your area. You are more than welcome to come to my Elk camp in Sept and there should be some there with someGreat looking sticks DS! You can ship some to Oregon anytime you want!
Thanks Farmer, Ya these won't last long I am sure of that.
WOW
Great post.
I really need to get to stuffing.
Yes JckDanls I should have added some Crushed red peppers, they do taste like taco and that's what the package said, Next time I will bump it up some. Ya price of meat is getting way out of hand but I like doing these. I figure I am into 12 1/2lbs (before smoking) for just under $50.00 pretty spendy BUT Go to the store and buy them. More money and not as good.threads like this makes me want to say the hell with the price of meat and fill my smokehouse up with sticks... I too like the clamp idea on the tube ... well done DS
Do you find the ratio of the seasoning to the meat ok ? so far for all the pre made seasonings I've used, I find that it could use more seasoning to meat...
Just in time I found this new snack stick and summer sausage delivery system!!!! Load er up and point West!!!!!!!!

Thanks WHB You dig into doing the snack sticks.
All vac pac'ed up and in freezer.
Rob, thanks for the nice comments, I would use your jerky gun no casing, but put them on a cookie rack or screen and I would smoke them first then finish them in dehydrator. Good luck and make sure you let us know how they come out. If you wanted to CHEAT a little and do them all on the dehydrator, use a little liquid smoke in them, This is how I first started out. NESCO Brand is what I was doing back in the day.
Great post. thanks for sharing. IT's posts like this that make me try new things.
Do you think these could be made in a dehydrator then finished in the smoker, then maybe I can use only my jerky gun and no casings?
