Here is the pictures of the whole chicken which was in brine in the frig overnight. I was not going for good skin because I had this one destined for pulling. Smoked pulled chicken enchiladas.

I really didn't need to see that since I didn't have breakfast this morning. Now my stomach is growling so bad my dog is growling back at me.

My wife makes the Enchiladas and I think she is busy tonight. So it will probably be tomorrow night.

Here is what the enchiladas looked like. I think I found a new favorite. They are basically

 Smoked chicken, cheese, Verde enchilada sauce, and some onion. These were very good.

 

 

 

I am going to try them with turkey soon. I have a feeling that a lot of birds will be going in my smoker.:icon_smile:
