Decided yesterday to do a spur of the moment smoke. I went to the grocery store across from work during break with the intentions of buying batteries. I bought batteries and 12 Iowa chops weighing about 1 lb per chop. I went home for lunch and put them in a brine of water, salt, brown sugar, garlic and onion powder. I pulled them out, patted dry and dusted with Strawberry's seasoning. I put them on at 4pm when I got off and they finished at about 6:15. Cooked them at 225.
In the brine.
Finished! I let them rest for a half hour in cooler wrapped and foil and dug in. They turned out awesome! I gave the majority away to the farmer that let's me hunt his ground for free. His favorite food happens to be iowa chops...coincidence that I smoked iowa chops? HAH! Said they were some of the best he has ever had! Thanks for looking!
