Just joined this site, that happened to come across one of these late nights of insomnia. So Hello all! I'm from the greater Chicago area and I use a Chargriller w/side box smoker instead of a dedicated smoker. My first foray into smoking was w/St Louis Ribs that I actually did on a Weber 22in Kettle grill, it came out so tender and flavorful that my father-in-law decided that he was passing the torch to me and made me the designated griller/smoker for family cook out. So far this summer I have done 2 briskets, a pork shoulder and a few rack of ribs
