So Last week I read a number of great threads about FATTIES. I eve read so old challenges about FATTIES. I knew I needed to try one.
I was planning to smoke a few chickens this weekend. When I got to the market I walked by the sausages and remembered I as going to have an empty Grate.
Here is hat I put into m FATTY.
! 1/2 # Hot Italian sausage
Sliced Provolone.
Fresh Spinach
Grated mozzarella
Roasted garlic
a row of pimento stuffed olived down the middle
I wish I had some roasted red peppers. next time!
I also was going to use a fresh pepper but decided against it.
I removed all of the meat out of the hot sausages.
I dont' have as many pictures as I would have liked but I was getting tired of cleaning my hands every 3 minutes to take a picture. lol

rolled out the sausage in a 1 gallon zip lock bag
Here it is. The olive were a nice touch
Forgot to take a picture after rolling it. Sorry folks but I have a picture of the finished product.
This is what it looked like 3 1/2 hours later running at about 225F.
I had a few problems with heat but eventually worked it out.
I have one last picture of the Fatty cut open but having technical problems tonight. I will try n a few to post the last picture later.
this was so much fun and tasted great. I see a lot of these in my future.
