Found out last minute that I have friends coming over for dinner.  Ran to get two tri tips and have them in the smoker.  Going a little hotter than 225 because I'm
short on time.  Fingers crossed!

I'm making sauteed mushrooms for the TT.

Roasted potatoes, carrots, peppers, tomatoes and zucchini as a side, green salad, and stuffed mushrooms to start.

Yum, that all sounds really good ! Y'all are gonna be eatin good sounds like ! TT's are so good, but then the rest of the sides sound great too ! Enjoy.... Now I want TT.... LOL
 
In a hurry? try Neanderthal style. A few minutes over hot lump charcoal each side , then on to the smoker . Of course after a nice rub and some wine! this is now my go to way for TT. It gives such a great seared flavor to the meat I cannot describe. Then the Cherry wood mix, it is awesome! I hope your TT turned out great!

     
 
Does it hurt the ability for the meat to take on smoke to sear it before smoking?

Not as I have noticed. It only on the hot amber roughly 1-2 minutes a side. Still plenty of area for the smoke. And with it being bbq to nice pink inside about another 2 hours is all it has needed. The taste is fenomenal!
