Ribs and ABT's.

30% chance of storms, but I have the canopy standing by just in case. 1 rack of ribs on, simple rub, smoker running a little over 300. Gonna foil them at 2 hours and put the ABT's on then. When they come out of the foil 45 minutes later I'm gonna brush them with raspberry habanero jam. Should be interesting.

Well, you know those days where everything kinda gets away from you? Yesterday was one of those. Had a great time but was too focused on conversation and wine "tasting" to notice the mini was running at over 400 for the better part of the cook. The ribs were for the most part ruined. Absolute crispy critters!! On the plus side, the rub and the raspberry habanero jam were fantastic together. Flavor was just what I wanted, a nice sweet, bright punch followed by a slow burn. The rub is pretty basic but it's nicely balanced. You can cut the salt down if you need to, but if you don't use a ton of the rub, it's not too salty at all.
Here's the mix:

Half cup salt
Half cup paprika
Quarter cup sugar
Quarter cup
Black pepper
Quarter cup cumin
Qtr cup onion powder
Qtr cup garlic powder
Tsp allspice
Tsp ginger
Tsp curry powder
Tsp cayenne

And here are the torched ribs:
 
Didn't get any pics of the ABT's but they were good. Used cream cheese seasoned with off the shelf Cajun seasoning and in half I put a slice of kielbasa, and in the other half used a slice of mango. I also used the mini sweet peppers instead of jalapeños. They were good and had a nice fruity flavor, but I think I'll go back to jalapeño next time. The mango ones were really good.
In the first pic above you can see the foil "pot" I used to melt the raspberry habanero jam. Just wrapped HD foil around a mason jar to form it. Worked pretty well.

Nice! We roasted marshmallows over the mini this weekend too. Boys used the big jumbo marshmallows for s'mores. I get the mini candy bars variety packs. Boys like resses peanut butter cup s'mores. I like the almond joy s'more!
 
Wine tasting, huh.....LOL....like Case said, we all been there, done that. I've been banned from the newer stove, I hear. Had my Le Creuset skillet preheated so hot when I dropped in the thin burger patties the smoke exploded off the pan so bad it set off both smoke alarms and I thought I heard sirens.....but it was the GF yelling at me. I knew it was her but I couldn't see her. It was hot, I had been sampling some Coronas......LMAO.....ahhhhhh....such good times
