I got a newsletter from Jeff with the recipe for Pecan Smoked Chicken Wings and decided I need to try it. The prep work was fairly easy. I mixed together Jeff's rub and mixed it with the chicken. I used about 4lbs of chicken and 3/4 cup of rub and 1/3 cup of olive oil. I probably could have used 1/4 cup of olive oil and been ok. Here is the chicken after it was mixed. It will sit in the fidge over night and I will throw it in the smoker tomorrow morning with Cherry Pellets and eat them for lunch.
