is there any tricks to using a rib rack? I'm doing two racks of ribs and dealing with limited space. Do I need to turn them over?

Biggest thing is to make sure that the ribs don't touch each other as it interferes with smoke penetration.   Whether or not to flip them kind of depends on your smoker.    Just keep an eye on them and pay attention to the color.  If it looks like the bottom of the racks are cooking more than the tops, then flip them.    Also, if one rack is cooking faster than the other, swap positions.

I don't flip and have never had one side done more than the other but like was already said, it will depend on your smoker.

I don't see any stupid answers here.  I don't use them, but they are helpful in some smokers.

 

As said, allow some space between the meat.

I'd suggest hittin them with a spray of Pam too... I've had em stick a little before ! A spray of Pam & no prob !
