Hello!

I'm here mostly to pick your knowledgeable and beautiful brains! As a very small time smoking enthusiast (I've only ever smoked stuff on a barrel BBQ using a tin with chips in!) I'm researching taking a leap and getting a large capacity electric smoker so that I can produce and hopefully sell some stuff! Specifically smoked mushrooms, which are so so tasty and very hard to get hold of in the shops. So, I'm after any knowledge or help you guys and girls are willing to impart- I really am a total beginner. Anyway, it seems like a community I'll be pleased to be part of! About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...

Welcome.  I joined myself only a few weeks ago.  I have been doing exactly what you plan.  I have reached out to people and received great advice to the point where I was able to have a very successful first and second smoke.

 "THEMULE69" gave the best advice.  Use the search engine at the top of the page.  From there you will get questions that you can start threads about yourself.  This place is an endless supply on positive info.  Good luck.

So what kind of mushrooms do you like to smoke?  Smoked mushrooms sound like they would really add a new flavor to many dishes that I cook.  The one that jumps out at my is beef stew.  I think adding smoked mushrooms over fresh would really add some nice flavor.  Do they last long in the fridge or freezer after they have been smoked?

Rob: I've never tried freezing them, I haven't even tried drying them yet!

I have read however that if you want to freeze mushrooms you're best off blanching them (boiling for a short time, then chucking in cold water to halt any enzymatic reactions),- how this would work with smoking I'm not sure, maybe you could cold smoke them then blanch them?

The impression I get is that mushrooms that have been cooked either on a low or high heat won't be suitable for freezing, but I'm not really sure!

It seems like drying might be the best option for smoked mushrooms. I am keen to see if its possible to impart a smoky flavour to mushrooms that have already been dried as this would make the whole process easier and cheaper, but I'd be surprised if is.

Otherwise you can dry in a very low over, in a dehydrator or apparently even in the sun!

PS. Absolutely definitely try in a beef stew, I bet they would be amazing!!

I have been making beef jerky for years but only in the dehydrator.  Never in the smoker.  When OI received my new smoker for fathers day I jumped on this site and have been learning as much as I can,  During the time since I received my smoker a friend pointed out that I hadn't made beef jerky in a very long time.  I thought I would try smoking some this time.

So to add information to our original conversation I can tell you that I smoked the jerky for about 2 1/2 hours.  It was not done so I threw it into the dehydrator as not to put to much smoke on it.  It turned out to be the best jerky I've ever made,

So for beef jerky smoking first then dehydrating was the way to go.  I would think the smae order for muchrooms.  Once you dehydrate do you think it will be harder to get smoke into the mushrooms?  I think If I decide to try mushrooms I will make plans to use them rigth away or give them out to friends.

Hi Charisk,

I have not tried cold smoking yet.  I hot smoked the jerky about 225F - 250F. I smoked about 2 1/2 hours then finished on the dehydrator.  The meat was still very raw. it came out pretty good.  all of my friends loved the added smoke flavor.
