Hello all!

My name is Jason from Houston, TX. I'm a newbie looking to get as much info as I can about smoking before actually smoking. Currently no setup since I live in an apartment complex but this will be changing before year end and would love to get some recommendations for a first smoker. I have 0 experience in smoking but that will definitely change once I get a smoker.

I currently own a sous vide supreme and checked out some of the threads regarding sous vide plus smoking and doesn't seem like anyone really reported back on if their experiments worked. I would definitely be up to do some testing after I get my smoker.

It's nearly impossible to recommend a smoker to someone. There are so many options. Considerations include, but are not limited to:

- Budget

- Neighborhood

- Availability of wood

- Whether you want to tend it during the smoke

- If you want a set-it and forget-it

- If you're cooking for a crowd or for two

- The list goes on and on...

You get the picture. If I could only choose one type of smoker and that was the only one I could have for all my outdoor cooking, I'd get an offset horizontal smoker. It can be used for smoking or grilling, and you can grill or smoke for two or 20. You can burn wood, charcoal, or convert it to gas. They can be had cheaply, and if modified properly, they can function as well as one costing much more. Also, the offset just looks cool.

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
