So, I am told I am making chicken wings for dinner in the afternoon. There is no time for marinating, injecting or anything fancy. Can I do it. She Who Must Be Obeyed assures me I can. 

I fire up the mini with a full chimney of lump charcoal.


While the mini is coming up to temperature, I cut the wings into segments (save those wing tips for stock). Then I tossed them with Cabela's chicken rub and olive oil. I put some VH Sweet Thai Chili sauce in a bowl for brushing



When I get outside, the mini is up to 400 F and I toss the wings on for 10 minutes.


I painted one side with the chili sauce, flipped them and painted the other side.



10 more minutes and I painted one side and flipped the wings and painted the other. 5 minutes later, I made sure all the wings were over 165 F and gave them one more brushing with chili sauce. As this brushing will not be cooked, make sure it is a fresh bowl of chili sauce with a clean brush so you don't contaminate the chicken.

The Verdict - Terrific. From start to finish this took an hour which rocket fast to a smoker. Although it was a commercial Sweet Thai Chili Sauce, it turned out great without a lot of futzing around. Sweet, spicy, nice skin. Who doesn't love wings?

There ya go!!! That's how wings are done! Nice smoke Disco! I love using the mini to hot smoke wings!!! Have you tried smoker fried chicken yet? Pit that in your Mini-WSM smoke list!
 
Looks great man! I would take a plate of those. I did a quickie last week but did inject right next to the grill and chucked them right in. They were great but I wore most of the marinade. Haha...

Thanks, TJ. I know what you mean about the injecting. Everytime I get the injector out, She Who must be obeyed cringes.
 
Good job, dude!  You were handed lemons and made...... chicken wangs!

I am really enjoying cooking my chicken at a higher temp - around 300.  Skin turns out so much better at the higher temp and it gets plenty of smoke flavor.

Thanks. It is true. My Bradley could only get up to about 290. The higher heat of the mini has kicked wings up a notch.

Great job on the wings Disco!! I like the salad, nice slice of bread, and creamed cukes also.  I see that glass of wine hiding in the background also. Reinhard
 
Beautiful wings! I really want to do some but the stupid things have been crazy expensive here lately. Hopefully I'll catch a sale soon.

Thanks, MD. We have the same problem here. When they do have sales, they seem to all come at once. I have bought 3 batches over the last couple of weeks but there hadn't been any on sale for months. Even on sale, one small tray is 1/2 the price of a whole chicken.
