So, I am told I am making chicken wings for dinner in the afternoon. There is no time for marinating, injecting or anything fancy. Can I do it. She Who Must Be Obeyed assures me I can.
I fire up the mini with a full chimney of lump charcoal.
While the mini is coming up to temperature, I cut the wings into segments (save those wing tips for stock). Then I tossed them with Cabela's chicken rub and olive oil. I put some VH Sweet Thai Chili sauce in a bowl for brushing
When I get outside, the mini is up to 400 F and I toss the wings on for 10 minutes.
I painted one side with the chili sauce, flipped them and painted the other side.
10 more minutes and I painted one side and flipped the wings and painted the other. 5 minutes later, I made sure all the wings were over 165 F and gave them one more brushing with chili sauce. As this brushing will not be cooked, make sure it is a fresh bowl of chili sauce with a clean brush so you don't contaminate the chicken.

The Verdict - Terrific. From start to finish this took an hour which rocket fast to a smoker. Although it was a commercial Sweet Thai Chili Sauce, it turned out great without a lot of futzing around. Sweet, spicy, nice skin. Who doesn't love wings?
