Yup, I just rubbed my first butt! Its 7lbs. I injected it with apple juice. Then I rubbed Mustard on the outside. I covered that with applewood rub, pepper, and onion soup. Now its chilling in the fridge. Its going on the smoker around 4 am. Im guessing it will take 12-14 hours to cook. Im going to try to keep the cooking temp between 250 and 275. Im using charcoal and chunks of apple wood. I need to cook till the internal temp is 203, right? I dont plan on foiling. Any tips?
