Rainy day brisket

Well I am putting on a nice small brisket piece... Family is sick... It's raining I figure... Why not make myself a decent dinner. So that being said here we go. I'm gonna document it for everyone feel free to critique away it's the only way to learn!

I just did my first brisket yesterday on an ECB, so I'm not in any position to offer advice, but...I too did a small piece (6#), and before I put it on, I injected about 1/3 cup of beef broth through the brisket. It (the broth) was in a small carton that my wife picked up at the grocery store. I also foiled it at 165 degrees and took it to 203. I had seen where other people were having trouble with their brisket getting dry, so I wanted to avoid that, plus I wanted to push it through the stall because I was in a hurry. I also rested it in the oven for 2 hours @ 170.

Next time, I'm going to inject it, but not foil to get a good bark, and cook it on my offset smoker.


Here it is just out of the oven, getting ready to cut. You can see a puddle of juice in the middle of the brisket.

Not much in the way of bark, but the flavor, moistness, and tenderness were excellent. My wife was still talking about how good it was this morning.

Hey thanks for the advice. I was worries about it getting dry also. Planned on injecting but go figure could fine the dang nab injector!!! So here we are... I'll work with what I got... I may end up wrapping it still not sure. We will see where the day goes haha
 

Got the old trusty dialed in.... Too bad I'm still waiting for my igrill 2 to get here... I Definately want to do away with the old temp gauges!!
 
Does the maverick have multiple probes? That's kinda what steered me towards the igrill2
 

About 2.5 hours in wanted to get a temp reading.... Looks sorta dry to me gonna go with my temp gauge isn't old trusty anymore!!! Oh well we will roll on
 
Well I ended up wrapping it... Stalled out at 160.... After this I am For sure getting a digital thermo and a thermo pen!
 

Need to get some rope gasket to seal this thing up... Anyone know of good (cheap) gasket and where to buy it?
I used Grapho-Glas 5/8" wide stove gasket tape without adhesive backing. I bought it on EBay by the foot. Glued it with Versa-Chem Mega Black High temp silicone. It is also good for sealing gaps around firebox and stack.

I also bought these:



Got them on ebay for $14.25 for the pair. It looks like it in the pic but they don't interfere with the firebox lid. I didn't need them for the firebox lid, it was heavy and I put a couple of wedges under the hinges and pushed down on the lid to  bend them to an angle that made the lid align with the gasket on the firebox. They're called Smoker Toggle Clamps. They show the dimensions in the pics on ebay so you can determine if they will fit where you want to put them.

I also added more vents to the firebox. It came with a vent in the firebox door, but it seemed too small, and the temp didn't want to go over about 275. Since I added the extra vents I've had it as high as 350 and it was still climbing.


Here is the rear one, and there's one in front too. See how small the door vent is.
