Hey Hey from the Desert

Stumbled upon (Thankfully) what appears to be an awesome forum. Was Googling some stuff for the knowledge base, clicked on the link, and liked what I found.

In a nutshell, I was raised down South and then got to trot around the world a couple of times courtesy of the Corps, trying all different kinds and types of Bar-B-Que. I'm not hard to please at all when it comes to any kind of food but the two years I spent North Carolina I had to refrain from one of my favorite foods. That vinegary wasteland that they refer to as Smithfield was just not appealing to my buds! Sorry Tar Heels, maybe y'all just don't know any better.lol


Anyways, been living in the desert since 1993 and it's getting harder to find good BBQ out here so I decided to try and start making my own. I have a Masterbuilt Gen II Electric Digital Smokehouse on the way and figured I would research some times, weights, methods, etc. while I was awaiting it's arrival and ended up here. Did a bunch of studying before I made my decision and it just seemed like with the very windy environment that I currently live in that electric was the way for me to go. And the wife and I stay fairly busy so I didn't want to have to tend to coals for long periods of time. Not kidding when I say it's usually windy out here.


Might have been a mistake but it seemed the best choice for my circumstance and I got what I feel is a good enough deal that if it doesn't work out then I can live with the loss. I've got a bunch of patience so I'm going to study up, listen to input, and do what I can to become a fellow grillmaster.


I like pork a bunch, beef too, poultry some but would like it better if I can learn to cover up the flavor, and I enjoy fish but it's hard to find out here (affordable anyway).


I'm all ears at this point!

What's up Ace. I'm retired Navy, worked with a lot of Marines in my time. I enjoy this forum and I believe that if you participate, you will too. Anything you want to try, post it and you will get plenty of different points of view. Then all you have to do is select the tips that you think will appeal to you and give them a try.


And, if you have smoking experience or opinions to share, feel free to do so. There is no real right or wrong, it's all in what you like (like the NC BBQ example you mentioned). Besides, if everyone liked it the same way, what would we write about?

If your looking for ideas on what and how to smoke something, put the project (butts, brisket, whatever) in the search bar and you will find tons of posts and pick out a style that appeals to you. Also, there are some members who you will quickly be drawn to as being a style of smoke you like. Some of the members I follow are:

Oh heck the list is going to get too long. Just know that the longer you hang around the forum, the more you will find people who do your style of smoking. Ask questions. Post projects with pictures (we love qview) and have fun.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...

Hello and welcome to SMF from another hot day in East Texas. You will find lots of information here in the different forums and threads. And members willing to help and answer your questions. Lots of members who use electric smokers who can help, Disco gave you a good list to start with.
