Bearcarver's unstuffed beef snack sticks

After my smoke of Venison SS a couple of weeks ago, I started exploring other sausage type things without a casing.  Dirtsailor was kind enough to post a link to Bearcarvers recipes and the unstuffed snack sticks looked like just the ticket for the next attempt.  I got them mixed yesterday morning and let them set in the fridge until this evening when I rolled them out and got 'em getting happy in the smoke.  I tried to keep the temp as close to 200° as I could, but when I added fuel to the fire it sometimes hit 215° for a bit, then settled back down.

Bear dunked his in ice water, then rinsed off the congealed fat in warm water, but I rolled mine between paper towels to absorb the fat while they were still warm.

Of course I had to snitch a few bites as soon as the first one hit 160° it

  Dang they are good!!!  I made some notes to self on the recipe I printed out for modifications on the next batch.  They had a bit much black pepper for my tastes, so will cut back just a tad.  I also added about 3 tbsp of Jeff's rub to the spice blend when mixing them up

 I omitted the Anise as I didn't have any handy here at the house.

I'll be taking a few to the shop tomorrow and see how fast they disappear.

They aren't the most attractive things, but they sure taste good!  Matter of fact, I'm snacking on one as I type this.  I grabbed part of one, cut a chunk of cheddar and having a couple of Ritz crackers with it.  Breakfast of champions

  I added about 3 Tbs of Jeff's rub for a bit of twist.  Can't really pick it out in the flavor, but I know how good it is and it sure didn't hurt anything.  I will cut back on the black pepper though!  I used a coarse ground pepper and it is mighty potent

That's Great !!

My Beef sticks are pretty mild, so there is definitely room for added spices, like Jeff's Rub.

My Bear Logs are more spicy than the Beef Sticks, and my Bear Loaf is even more spicy.

However none of them are as hot as many people like. My Son likes things hotter, but I like my Bear Loaf the best (heat wise).

You did a Great Job, and I'm glad you like them!!
