Well, it's in the history books and I'm happy to say I pulled it off (with help, of course) with no complaints and nobody spit the bird out. A big Thanks to JJ for encouraging me to use his chicken mop instead of the Cornell mop and for his brine recipe as well. A very good combo indeed and I even used the raw egg, which I had doubts about. We did 80 pounds of chicken quarters with some larger pieces separated for a total of 113 pieces of chicken. Happy to report not ONE piece of chicken was left when I left the event at 2 PM. It hit about 90 degrees out and the pit was throwing big time heat so grates were moved around and a quick fix with some extra bricks to elevate the grate a bit to keep flare ups to a minimum. The hot links were scarfed down by the crew and others stopping by to see the cook, so 5 pounds of those went quick....Willie
