Eight and a half hours in it reached 203. That seems to be some magic number for brisket so that was what I was shooting for. I then towel wrapped in a rest. I started dozing off around midnight and didn't want to forget it out so after 45 minutes it went into the fridge.

Sliced up this morning. It has a really great smoke flavor but the texture is more like jerky than the soft incredibly delicious tongue that you get with boiling and than baking in BBQ sauce.

I have to go help at my daughter's school for the rest of the morning. I'm gonna try and finish it like I normally would and bake it for an hour with the BBQ/sweet sour sauce that I usually do.

It's definitely good but not great.

The past three weeks Civil Defense has been putting out updates for the people affected by this storm. There are still people that don't have their power or phone lines restored; but it's very few (99% have been restored). The CD has been advising people where to get water, ice, power up their cell phones, etc...

So, today they start off with a new natural disaster emergency warning: the area hardest hit by the storm has a lava flow heading right at them! I'm not making this up!!! It's a mile and a half from the people that still don't have power or phone lines restored. They tracked it at 100 meters closer yesterday and if it continues that way it's going in three months that subdivision of houses won't exist anymore.

On the bright side: a co-worker that lives on that side of the island was showing pictures of trees that he was scooping up. I ask him what he's doing with all of the trees? Well turns out he has a portable sawmill and he's cutting lumber up so he can build his own house. So I ask him if he can make planks for smoking? Of course he can! Guava planks, ohia planks, kiawe planks and waiwi planks are in my near future... :sausage:

When you first said trees I was hoping he wasn't collecting the Albizia trees for his house. I built a 60' long log trellis out of the Ohia trees. That's one tough tree. Logged them off a property in Puna, Hauled to the house we were working on at Hapuna Prince Beach Resort. I couldn't keep up with the sharpening of my chain blades!

Yeah I've been keeping track of the flow. Have some friends that live near Pahoa. My friend that lives in Waimea has a Property in Hawaiian Acres. No real structures on it. Just a water cistern and a shed. He goes camping there.

I really liked the area between Pohoiki and Kalapana.
