Pork Picnic (First attempt EVER!)

Alright everyone, I am posting my attempt at smoking two 10lbs Pork Picnics for the first time. I have done many pork shoulder/boston butts, but never a picnic. I am hosting a fundraiser tomorrow, and promised to sell pulled pork sliders. Here is what I have done so far. Will keep this updated with the outcome. I am using my WSM 18.5".

Sorry that I didn't take pics of the Prep, but I did remove the skin and tried to keep a layer of fat on them.

My take on the Minion Method, used an old coffee can to keep the middle hollowed out.

On the Smoker with Hickory wood chunks. The Second Picnic is on the grate below. I am hoping that the top Picnic will drip down and help baste the bottom one. I am factoring 1hr 45 min per pund. For some reason I find that my smoker takes just a lil bit longer to get 205 internal temp.

Will keep things posted as I go along with pics. Hopefully this comes out well. Any helpful tips are greatly appreciated. Like I mentioned above, this is my first time ever doing a pork picnic.

I wouldn't think you would need to foil since you injected, but I don't normally foil or inject. I am curious about your injection, what did you use? Apple juice mixture?

I like picnics although you'll see less meat come out of them, Some folks say they actually taste better becuse of it, I can't say, I like them all.

I want ya to know you definately have that smoker hooked up, that looks like a rebreather device & WiFi.

For the injection I used apple juice, sugar, water, salt, and Worcesteshire.

Yeah, that's my tempature controller the wife got me for my bday. I love it. But not as fancy, doesn't have the WiFi. I don't mind though. This is better for me anyways.
 
Both Picnic's turned out great. Was a little nervous about doing them, wasn't sure if the skin was to be removed or not. Sold out on both picnic's in less than 45 min. That's a good days work,
