I have read several times that stuffing a bird and smoking it can be dangerous due to the temp and food poisoning.  Not going to do that.  However, I'm thinking a smoked side dish like a cornbread stuffing with bacon would be a good addition.  Going to have to try that one this Fall.
The only thing I stuffed it with were the apples and onions for aromatics ONLY! After the bird was done, I discarded said apples and onions. I wouldn't stuff a smoked bird with anything I planned to eat. EVER.

My Dad used to smoky turkey in his stack smoker. Sometimes he would put a ham above the turkey and let the ham juice drip on the turkey while smoking. It was good
