Q'ed Up Meaty Beef Back Ribs !!!!

so...in 2 or 3 rib cuts, how long were they over the smoke?? any foil involved? (and i know, some think the foiling part is not only unnecessary, but taboo)

they look great, and i think my next rib adventure will be beef...i feel like i got the spare ribs down

Hey mrmosh303, thanks for the kind words ! They were in the smoke at 265* for bout 3 1/2- 4 hrs. with apple wood ! No foil... I'am personally not against foiling just don't foil ribs.... I like a little bite off the bone, not close to or fall off the bone.... However, that's just me !

Ya should give beef back ribs a shot if ya can find some good meaty ones... They can be difficult to find though ! Good luck on your smoke, if ya need a hand just ask & be sure to post your Q view.... Thumbs Up
 
I have been inspired by the efforts of yourself & Bearcarver & have gone out to get beef ribs.
Problem is here they get cut different . And the cutting is done off site so you can't argue about it.
Cut the way I want they already have some purple ( seriously) marinade on them.
Don't do lurid coloured commercial sauce style stuff.I hate it , I am allergic to it, I feel sorry for people who buy it.
I have them cut "assado" which is what our Argentinian community call it.
I will do ( I think) something with a South American feel.

I have the same problem you guys have.A lot of outlets don't actually break up whole bodies its boxed into cuts.

I got 2 kg of assado which I will do on saturday.

Its the same ribs just cut the opposite way. 

Here its chargrilled a lot by the Argentinians. I will smoke them while the Rugby game between us & NewZealand is on.

I will put my own thread up .

Thanks, it was a fun smoke for sure & really enjoyed doing it with my son.... And I agree, I am always on the lookout for the good ole meaty ones ! One of the greats on here, Bearcarver stocks up on Prime Rib at Christmas time and will trim off the ribs from the roast & has some awesome ribs when he does a smoke ! My wife just kinda lucked into these.... I'll be watchin come Christmas time for sure !

These were smoked with apple wood for bout 3 1/2 to 4 hrs at 265* ! The rub was Mad Hunky on this smoke, but I've used Jeff's rub as well..... They are both real good ! Let me know if I can help with anything else !

Dang, those are some Meaty Bones . . . I can only find Beef Ribs with enough Meat to make a Broth ... well . that's the way it is in 'oihO' :frown:

Yeah, that's the way they usually are here too but when we find em like these..... We buy em out !
