They had drumettes on sale again. Why does it always seem to come in bunches. Anyway, that meant more wings. Good thing too, I was starting to go through withdrawal.
My first problem is She Who Must Be Obeyed just isn't into hot wings. So, I experimented. Serves her right.
I mixed up:
3 tablespoons honey
1/3 cup chili sauce
1/3 cup soy sauce
1/2 tsp Chinese 5 spice
2 tsp lime juice
The chili sauce was just plain old Heinz. I would have liked to use hot asian chili sauce but we all make sacrifices for love.
I split the sauce in half. I injected the drumettes with the sauce and tossed them in the sauce left from the half I used to inject. I put them in the fridge to marinate for 4 hours and put the other half the sauce in the fridge to use as a baste when I smoked them.
I put a full chimney of lit lump charcoal in the mini over apple chunks.
The mini got up to 400 F and I put the wings on for 10 minutes. I brushed them on the top side with sauce and turned them and brushed again.
It only took about another 10 minutes and the were all well over 165 F internal temperature and nice and sticky.
The finished product.
The Verdict - Absolutely delicious. Nice and tangy with some sweet licorice hint from the Chinese 5 spice. However they would have been better with at least 1/2 the chili sauce being hot Asian chili sauce. OUCH. Sorry, I said that out loud while typing and I have just been corrected. They were perfect with the mild chili sauce.
