This is with all vents wide open. Trying to get a baseline on how much charcoal to use. When I graphed my old ECB temps it looked like a sine wave. This thing is like a dead person's EKG! Flatline!!!!

I've thought about smoked bear. Has anyone tried it? Our gun club has a bear roast every year after the season wraps up. I think it tastes terrible. Way too gamey for me and I eat pretty much anything.

Week 2 of the WSM and I'm loving it! Menu for today:

7# pork butt
2 racks of BB's (to try out Jeff's sandwich idea)
2 racks of beef ribs
7# of chicken thighs

This thing is amazing, dumped in full chimney of lit coals. Temp went to 225° in less than 5 minutes. Got worried and closed down the bottom vents to 1/3 each. Temp immediately stopped climbing and settled in at 225

I guess everything was good. I can't even find the bones from ribs! There's not a drop of meat left....

Beef ribs today. Got sidetracked playing in the mud last night and forgot about them.
