Well she's done. For now. I got clever and decided to use long shank rivets to hold the grate. Except the ones I have are a millimeter too short, so if you wiggle it around the grate can fall thru. So for now I've got some long screws just to hold it. Didn't have any nuts but it'll do for now. Stand by for Q-view!!

Standing by!!!!

A good diffuser helps reduce the temperature gradient from top to bottom.  It reduces the chance of a grease flair-up.  It helps keep the temperature more consistent. It serves a purpose in a smoker which is as small as a mini-WSM.  Larger vertical smokers, like an Ugly Drum Smoker (UDS), can get away with lacking a diffuser.  Some UDS users actually like the flavor the dripping grease makes when it hits the hot coals.

Thanks for that. The pot comes with a pretty decent diffuser and I usually put a pie pan on top of that.

I'd have to say that a diffuser is nice for certain cooks, but not required in the Mini. I do use one when it's cold. My pork butt cook the other day ran with the steamer insert for 13+ hours on one loaded basket. That's the longest I've ever had out of the mini.

You've seen my reflectix sleeve for Winter or wind right?  I wanted something easy and light that would keep the mini running the same in any about any weather with no need to put in heat sinks like  solid diffusers and terra cotta pots in.   You can have 40 mph winds and still be smoking like no wind....it's a must for minis and other smokers if y'all don't know about it.

Went to the cabin for the weekend. Did a pork butt and some chic thighs. Pork butt was awesome, and it did it hot and fast at 300. No foil, just straight through and done in six and a half hours. The mini was a champ!!

Nice!  That's how i do mine as well on the mini and it always gets a good mahogany color.

It really did. Wasn't a heavy bark but was nice and crunchy without being burnt. I'll start another thread with pictures. I'm so thrilled, this new mini almost seems to work better than the old one.
