There was a pork tenderloin on sale so, it was time to fire up the mini.
I mixed up some honey, a bit of orange juice and some grated orange rind. I brushed the loin with the honey mixture and pressed in some dried rosemary and some fresh thyme. I let that sit in the fridge for a couple of hours.
I lit up a chimney of lump charcoal. I added a couple of chunks of apple wood.
I got the mini up to about 375 and put a tray of cubed, oiled and seasoned potatoes on the mini for 1/2 hour. Then I through the tenderloin on.
I took it to an internal temperature of 110 and flipped the tenderloin.
I took it to an internal temperature of 153 let it rest and served it up.
I served the pork and potatoes with a fresh salad from our garden.
The Verdict: The tenderloin took the smoke quite well and was very tasty.
