I started off with a 17 pound Prime Rib


I seasoned it with Salt and Pepper, Montreal Seasoning, I made slits and stuck cloves of garlic

in them, then I injected it with a beef aju that I made up for it to use for a dipping sauce.


I smoked it around 240° for around 5 hours I do believe



Couple of pictures of just before I pulled it @135°


Next I got some hot coals going to crisp up the edges on the out side make a nice bark.

Foiled up and let it sit in the cooler for around 1 hour while preparing the other sides.




We cut into it and oh my god, juice galore, flavor was out of this world, I of course took the biggest cut. LOL



My plate consist of two, one plate for the massive big cut of prime rib with sauté mushrooms, and the other plate for my potato salad, my bacon wrapped asparagus, and my side salad.  I was one happy camper oh yeah you see the can koozie that means beer.

Now I feel dumb----I never thought of the 2 dish method. I always have to make numerous trips from the table to refill my plate.

From now on it will be Prime Rib on one plate----Veggies & Taters on another plate!!!

No kidding...was not aware of prime rib prices until a few weeks ago when I stopped by Costco to pick one up. Saw 95$ for a piece that would not even feed half my family!!!

So prime rib will have to wait until my kids move out i'm afraid! LOL

Ya gotta catch them around Christmas Week. My last 4 years were "Choice" Prime Rib per pound:

2010----------------$4.99

2011----------------$4.99

2012----------------I was in Hospital.

2013----------------$6.99

Thanks everyone it turned out really good, its not my first one that I've done though, I got a few under my belt and they keep getting better, I paid 131 I believe for that 17 pound prime rib.
 
Yeah I have to agree its a expensive piece of meat to mess up, I started off doing small ones until I got comfortable, now I do usually two a year for the family. Thanks for looking everyone.

Right now, I have 18 Boston Butts, 12 racks of BBs, 22 Pork Loins, 8 brisket flats, 1 1/2 whole Ribeyes and 1 whole NY Strip chilling out in 3 different freezers just waiting for me to decide to cook them.

BBs were bought at $1.99 per pound, Ribeye's were $5.49 pp, Strip was $5.99, trimmed Brisket flats were at $3.18 pp, pork loins were at $0.99per pound, 12 of the Butts were at $1.29pp and the other 6 were at $0.99 pp.

Gotta love it when meats have a short date on them at Kroger
