Best book for curing Bacon, Panchetta, and other meats.

I wanted to post the book I used to make bacon.

Once I read it, I went out and bought the pork belly and made my first batch.  I don't even smoke it because I didn't have a smoker at the time.  I now have a smoker and once I understand how to use it I will smoke a batch.

 

This book is great all around.  Once I made regular bacon, I tried Maple bacon.  Then I tried Panchetta and that blew me away.

 

If you have any interest in making bacon try this book.  You should be able to find the recipe from this book online but I think it's a great book to own.  It's a great resource for other curing projects.

I got the Kindle version of this for $15 I think...money well spent.

I could not agree more.  Glad to see Kindle is finally coming out with good cookbooks.  I looked a while back and they had nothing from my cookbook collection.  I have noticed more and more are showing up.

 

This book really kick started my interest in curing.  It also made me know what real bacon should taste like.

Just a note on curing books and internet sites..... There are typos and many have been noted on this forum.....

Sooo, a basic understanding of curing and the different methods, and the different rates of cure maximums/minimums allowed, are important when using recipes that some "hired person" is used to transcribe those methods and formulae into print.....
