I wanted to post the book I used to make bacon.
Once I read it, I went out and bought the pork belly and made my first batch. I don't even smoke it because I didn't have a smoker at the time. I now have a smoker and once I understand how to use it I will smoke a batch.
This book is great all around. Once I made regular bacon, I tried Maple bacon. Then I tried Panchetta and that blew me away.
If you have any interest in making bacon try this book. You should be able to find the recipe from this book online but I think it's a great book to own. It's a great resource for other curing projects.
