I fish a lot, and I trade fish for wild game in my circle of outdoor friends. This weekend I took up the challenge of Antelope Jerky. Dakota Dave was kind enough to loan me his jerky gun as the meat was ground. I'm still using Cabela's products til I get my smoking under control, then I will work on some custom flavors. I just cured and smoked with Cab's hickory jerky kit. Slightly over salted, but still yummy.
