Thanks to Silverwolf 636, Buck Wheezer, The Dude, and all the others who I'm going to do a tremendous injustice by forgetting to mention here (so thanks to everyone who ever posted pics or tips about a fatty!).

I was supposed to have a "smoke-off" with a friend of my wife's who also owns a MES, but she had to back out for health reasons. Since I already had the ingredients for the fatty and a turkey breast, we are having another couple over. My ingredients for the fatty: Diced jalapeños, minced garlic, cream cheese, Monterey Jack, Panko bread crumbs, and a little cumin. It's on the smoker with mesquite pellets right now.

 One of our guests called it a "mindblowing experience" and asked multiple questions. He swear he is going to try this! My wife asked me to marry her! (Of course I said yes.)

For as wonderful as this was, and as much as everyone enjoyed it, it really was NOT that difficult. I was scared that I would do something to screw it up, but like everything else I have researched on this site, there is SO much great information here. I can not say enough about the wonderful contributors to this site. You make me look good!

Well done Bertman, it looks VERY good. Any pics of the fatty with all the ingredients before you rolled? Would loved to see how you laid it all down. Cheers!
 
Thanks, c farmer. The bacon slices were disintegrating at one end, so I had to be careful to match a "good" end with a "bad" end, but otherwise it was pretty easy.

knifebld, unfortunately I was trying to get a few things accomplished at once, and didn't take pics until after I had rolled it. I used SilverWolf 636's instructions (found here), and my results looked almost exactly like what he had posted. I did decide to spoon off small hunks of the cream cheese and drop them into place. I was afraid to spread it and ruin the sausage layer.

Meanwhile, Mom and little sister are ticked today because the kids returned home from camp late yesterday evening and my son got up for work this morning and packed the leftovers for lunch!

Wow. I just haven't got around to a fatty yet but great looking ones like this are dragging me in. Great project!
