St. Louis Cut Spare Ribs - with Q-view

Went out yesterday for  a full packer and somehow ended up with Pork ribs (don’t ask me, no idea how I ended up with that….guess they just looked so good, and the 6 hr cook time doesn’t hurt either!). 

 

 

Here they are prep out with a yellow mustard base coat and a homemade rub…Equal parts granulated garlic, onion powder, black pepper, sea salt, cayenne pepper, and paprika, with a dash of oregano and about a half a cup of dark brown sugar. 

 

 

On the Kamado smoker with lump charcoal around 240*, TBS rolling with a 50/50 mix of hickory and cherry.

Here they are a little over 2 hrs into the cook, hit with a little spritz of apple cider vinegar, some rub mixed in, and a splash of soda...

3.5 hours in, time to foil... squeeze butter and dk brown sugar  for both sides of the ribs, then back in the Kamado still holding pretty solid around 240*

 

 

 

1.5 hrs in the foil and i'll be back! cheers.gif

Coming down the home stretch... just pulled out of the foil, seem like they're just a touch behind, but i'll wait them out!!!  :jedismily:
