I smoked some turkey legs today for the first time. Sorry i didn't take pictures putting the brine together but I do have pictures after brinning. Started the temp in my Texas Elite at 225. At around 2 hours the temp in the Traeger was reading 281 and the legs at 160, so I turned it down to 225 for the remainder and the Traeger temp was at 251 at the end. Right around 2.5 hours the temp on my thermometer read 163 which is 165 per testing results of the thermometer. I turned up the heat to high for 15 minutes to brown the legs more. The legs temp was at 169 when I pulled them off and wrapped in foil to rest. Since it didn't take as long as the Traeger recipe said, I will have to warm them up when ready for dinner.
