Hi all, my name is Phil I stumbled across your forum a few weeks ago and have been reading the threads with interest.

I have been thinking about home smoking for quite some time and the threads I have read here has inspired me to give it a try.

I am hoping to get some tips of where I am going wrong when I post my failures.

I bought a Smokai smoke generator which I have fitted to my gas BBQ picture attached.

I have never done any smoking before so I am a total novice I particularly enjoy smoked fish which is costing me $75-$95 per kilo at the moment so hoping to save a bit there.

I will also be trying Pork & Beef in the coming months.

Hello and Welcome to our addiction.  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have, and pictures help a bunch.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  Check out Jeff’s 5 day smoking E-Course ( link below ) that will help you get started.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!

Welcome there are a few Aussies here.
If you look in the fish section you will see where I have posted some smoked mackerel.
Great fish to start with cheap, very tasty but perhaps a bit strong for some palates.
Blue mackerel about $ 5 a kg as opposed to farmed Tassie trout & salmon at about $ 17.
Don't know exactly where you are you may have different access to fish to me. Sea run mullet another cheap option,tailor ditto.
I would hot smoke first time out of the starting gates,just my 2 cents worth,

From Western Australia and both hot and cold smoking in this neck off the woods
Have done cold smoked salmon and it does not taste like shop bought stuff same with cheese....yum

Hi, thanks for the reply nothing wrong with mackerel I live in the Bondi area and do most of my fishing in the Harbour and the inshore reefs when I get a chance.

I think I will be buying and smoking rather than catching I would starve if I depended on catching the fish.

I am the same.! I have several kayaks but have trouble getting out there in this weather.
I go better at Greenwell Point than the Harbour.
Funny how people think of mackeral as bait when they are on plates all over the world.
My Scottish friends go silly when I give them out.They eat them on toast for breakfast!
