I've got three 9 lb butts going for my nieces grad party. Had my smoker probe in a bad spot and was getting a false read on chamber temp so they started a little quicker than I wanted. Now I have it backed down doing the temp dance for when I want them done. Trying to go no foil to get some great bark. I'll update as I go. Gonna be a good night.

Nice.  How long have they been on, cause its dark there right now.
 
Looks good!   Interesting, so do you cook them the whole time in the pans?  And did you add liquid to the pan yourself or is that all just drippings?  I've seen the pan used on a shelf underneath, but haven't seen this before (though I'll admit being new to the game).   Do you always do it this way or just because you couldn't put the drip/water pan underneath cause the shelves were full?

I sometimes just put them on the rack, sometimes pan them. I panned them this time because it would have been a ton of drippings and was trying to prevent a mess on my freshly stained patio. I really can't tell the difference between panned and not. I don't add any liquid to the pans.
