From the price it seems like it is the flat

Smoke it like any other brisket.

I am doing mine, full brisket, at 230F

I would plan for about 10-12 hrs "unfoiled"
 
Do you use apple juice to spray your brisket while it is cooking?
 
I am smoking mine right now in my MES. I do not spray or mop. It is very humid in the smoker so there is no chance of it drying out.
 
What about if I take the water tray out after 8 hours and spritz with an apple juice solution from there until it's done? Would it dry out?
