I typically use a variation of the 3-2-1 method in my 40" MES.  I also have the side mailbox with the amazing pellet smoker mod.  I'm usually fairly happy with the results.

I'm going to be doing ribs for a small group but we'll all be away from the smoker all day.  Is there a method I could use to put them in and let them ride for 6-7hrs?  I know about how many pellets it takes to smoke for 3hrs so I'm not worried about that.  Just worried that they wont come out as tender without wrapping.  Extra Apple juice?  Dripping bacon grease from the rack above?

I've been reading the studies on chilled/almost frozen meat and how well they absorb smoke.  I figure I could get an extra 30-60 minutes of 'unattended time' if I did that as well.

Any experience or do I need to sacrifice a few racks to try it?
 
225 for 6 hours should get you pretty close, especially if they're par frozen. Lots of folks swear by not foiling and constantly tell others who do foil that they're wasting their time, so there must be something to it.
 
I stopped all the foiling, changing temps, spritzing etc. I put them in at about 250 and dont even open the door for 4 hours. After that its just check them for doneness. Perfect ribs every time.
