Hello and welcome from East Texas, and a big congrats on the ribs the look great. What temp did you smoke at ?

Did not give them a tug. Didn't want them to fall apart on the smoker (turned out that wouldn't have happened at all!) They smoked between 250 and 300. Still working on keeping the temp steady and learning the ins and outs of the smoker.

At this temp.. they should have been falling apart when you tried to take them off the smoker... what are you using to measure your smoker temps with ??
