5th of July Pulled Pork!

Final result was amazing.

I was instantly a little upset when I first pulled it... it felt tough and it was a little dry.  Turns out, it was just that section of meat.  Most of the meat, especially the money muscle, was dripping wet and so tender it was ridiculous.  The bark had a real nice spicy bite from the rub and really complements the meat.  We stood around and ate it like crazy while we were pulling it.  Then we made some sammies and ended up just picking the meat off with our fingers because we didn't want to taste the bread.  It is SOOO good and I can't wait to mix in the juices from the pan after the fat separates in the fridge overnight.

The finishing sauce was hit and miss.  I really liked it, but my wife isn't a big fan of apple cider vinegar and couldn't stand it.  I'll definitely be putting it on my meat, though.

Next time if you want to cut the time down & get even more Bark, you could slice it in half horizontally, and do 2 half Butts.

Is it just me, or does smoked meat taste better after sitting in the fridge for a day or two?  It seems, for some weird reason, whenever food comes directly off the smoker I think it's great.  But a couple of days later, when I pull some out of the fridge, I feel like my mouth is going to explode because everything is so amazing.  I don't know that I could ever put my finger on any type of flavor difference, or maybe I'm just too fatigued after stressing about my first time smokes to enjoy it as much as I do when I just grab some the next day.

Either way, it's hard not to just eat chunks of this pork cold out of the fridge, and it's amazing heated up, too.  Last night I mixed up a bowl of hot pork, mashed potatoes, and corn.... MMMMmmm....

Another thing that I'm kind of shocked about:  I thought you just mix the whole pan of pork with bbq sauce.  Embarrassingly, my wife had to tell me not to.  I'm so glad I didn't because I don't think I even like it with bbq sauce.  It tastes way better on its own!

It can't be just you, but it could be just you & me!!

I think one reason is because after smoking all day, your sense of smell & taste are overwhelmed by the smoked meat.

Then the next day your senses are all cleared out, and you're going at it nice & fresh, so the flavor hits you hard.

Ha!  :)  Glad I'm not crazy -- but I bet you're right.  I think that has a lot to do with it.  We usually end up hanging out outside while smoking.  It only takes a couple minutes of being out there for my clothes to completely smell of smoke.  I guess I forget that my senses are being constantly inundated with smoke for hours before I taste the food.  That makes complete sense.

True, but it seems like a lot of times meat cooked in the oven is best piping hot and fresh and loses something after being in the fridge and reheated.  Fresh ham, chicken breast, etc, all tastes best to me straight out of the oven.  I guess that's why I'm shocked that I found myself enjoying smoked food even more after it's been in the fridge.
 
Sorry to resurrect an old post... I was just wondering if anybody ever pulls their meat, then sticks it back in the smoker for a little bit so all the meat can absorb some more smoke?  Or would this dry it out too much?

All kidding aside, I never tried it, but I think you're probably right about it drying out.
