Final result was amazing.
I was instantly a little upset when I first pulled it... it felt tough and it was a little dry. Turns out, it was just that section of meat. Most of the meat, especially the money muscle, was dripping wet and so tender it was ridiculous. The bark had a real nice spicy bite from the rub and really complements the meat. We stood around and ate it like crazy while we were pulling it. Then we made some sammies and ended up just picking the meat off with our fingers because we didn't want to taste the bread. It is SOOO good and I can't wait to mix in the juices from the pan after the fat separates in the fridge overnight.
The finishing sauce was hit and miss. I really liked it, but my wife isn't a big fan of apple cider vinegar and couldn't stand it. I'll definitely be putting it on my meat, though.
