Nebraska - Go Big Red!
My mother in-law and a friend came down for the 4th so some smoked meat seemed like a good idea. Decided to go with a drunk roast, the missed really seemed to enjoy the last one I made. Rubbed it with a local beef rub I like.

Going to try some smoked Mac and cheese till go with it later. For now just chilling with some brews and tunes in the backyard.

The roast is coming a little faster then I anticipated. 2 hours in and I am already at 111. It is a 5# Rump Roast and I was going to pull it at 135 then stall and in the cooler for an hour before eating. Looks like might be two hours in the cooler and we easy a little earlier then I planned. Lol
 
Ok so it took 2 hours and 45 minutes to get an almost 5# rump roast to 135. This is my second time doing rump roast and it looks like it takes about 30 minutes a pound when you want to get it to 135.I guess getting done 2 hours before people were planing to eat and letting it rest in a cooler of towels is better then getting done two hours after people want to eat. LOL Mac and Cheese is still on so I am going to go get me another glass of beer and relax.
