Going to a 4th of July party tomorrow and the family begged me to make some
Pastrami so I smoked up a flat and a point cut on Tuesday, sat it in the fridge for a couple o days and today steamed and sliced it! This is becoming one of my favorite things to make! Just got a couple of pics. Of course I had to make myself lunch today to have a taste. Tomorrow I probably won't have any as I'd like everyone else to enjoy it.
 
I love making pastrami. Did you corn it yourself?
 
Nah, didn't corn it myself. Used a store bought, desalinated it, made the rub, and smoked it. Then steamed it. Would love to try the whole process from start to finish but brisket prices are so out of hand where I live. Still living off St. Patrick's day sales in the freezer haha

that was the second brisket i smoked, i corned a packer for 2weeks, then smoked it for 12hrs, it was awesome. if brisket prices are an issue, i've never done it, but maybe now i will, to corn a pork shoulder, and smoke it, actually, a deboned shoulder, you know what, that just made mt project list, thx.
