new to smoking from southern california. aaron here to gain to knowledge about barbeque. not too shabby on the grill or with the stove, but want to get down with slow cooking and smoking meats and fish. i was watching pitmasters on television and pulled the trigger on a starter kit; the mb 2 door dual fuel. i am aware of the modifications necessary to get it to a decent smoking condition. looking to do salmon, turkey, picninc, butts, ribs and drumsticks. grilling_smilie.gif
other interests include: camping, fishing, surfing, diving, kayaking, 4x4, 5.56/12ga., dogs.

Welcome Redeyejedi!  Glass you found SMF Aaron.  Congrats on the new smoker and all the fun, delicious times to come.  Lots of information here to put to good use.  Great distractions when you aren't smoking.

reading as much as i can to make the trial runs less costly.
loads of info here.
did a boiling water test to determine what my readings will actually be and the weber style is 2.5- 3* below actual and the 733 redicheck is 2* below. also dipped the factory mb gauge in there to get an idea and its ~10* below actual. all useful info.
i found an old baby monitor which can be helpful for hearing alarms with non wireless remote monitoring systems, just have to find the base charging cord.
