3-2-1 method tweaks?

I tried the 2-2-1 method on my 30" MES and was not impressed

I now use the 5-0-0 method

  (smoke 5 hrs without foil) after this last batch and they turned out phenomenal

I sauced mine 1.5 hrs prior to pulling.  May try saucing just a tad bit earlier.

The great thing about this hobby, like brewing beer, is you get to consume your end result and there are many ways to get great results

Really good looking Ribs .  I agree , keeping a log is a great way to get a consistent finish. I have keep a "Log" for ages ( Makes remembering easier as you get  'older' . )
