I tried the 2-2-1 method on my 30" MES and was not impressed
I now use the 5-0-0 method (smoke 5 hrs without foil) after this last batch and they turned out phenomenal
I sauced mine 1.5 hrs prior to pulling. May try saucing just a tad bit earlier.
The great thing about this hobby, like brewing beer, is you get to consume your end result and there are many ways to get great results
