Bad Expensive brisket

Not only is meat prices going through the roof but the quality is going through the floor.  I have been cooking in contests for 14 years and have never had a worse brisket than a few weeks back.  Paid 100 bucks for this Prime hunk of tire scrap.  It was the worse brisket i have ever had...the whole point had gristle or some sort of course fibers running through it.  I never did get it to break down,,,even after cubing and making burnt ends out of it.  The flat had fat running all the way up into the meat, so when it was sliced it only left maybe 2 inches of actual meat.,,,and the fat had huge ugly blood veins running through it.  I hope it was just a random bad, miss graded brisket that got through.

Brisket is overated especially when you can get Prime Rib for the same price, in my parts anyhow.

Yes I agree but you can not turn in prime rib in for a contest.

I wish I could get prime rib for that cheap... only place I can find it around my parts, it costs me $11.99/pound.

Yeah, brisket around here in my parts of the PNW is running about 5 bucks a pound. I just watched an episode of Pit Masters on Netflix and Myron was using the Wagyu brisket. Claimed it only ran him about an extra 30 bucks over a regular brisket but he considered that a minimum extra being in a contest where he could win thousands. Not a fan of Myron, by any means, just relaying info to check out for future cooks...Willie

Here's the current Pricing at RD

 

  SUPERIOR CH ANGUS beef EXPORT RIB/PRIME RIB $8.97

USDA CHOICE GRADE BEEF ribey FOR PRIME RIB $8.89

 

However, the briskets are showing $4.00 a pound, I'll have to get up there and check it out.

Well, either way, I do NOT plan on smoking any Tofu this weekend.

 

BTW Sqwib's Buffalo Chicken lollipops are a huge favorite at parties.  Thumbs UpThumbs Up
