I am about ready to do a run of salmon at a low temperature. When I smoke I always through a few thick slices of bacon in the smoker for snacks as the day does on. I plan on smoking my salmon as low as I can get which is usually about 150. Should I have any problems if I throw some bacon slices in at that temp until they are done? I know it will take a while but that’s okay.
